One more day to go before the new school year begins. I think we’re all ready for it now. Most of all, I’m exhausted by trying to make three interesting and balanced meals every day. There’s no point making a salad for myself when I have to make something completely different for the kids. Once they’re back at school, I can return to my healthier (and repetitive) light lunches.
The fridge was looking very bare last night, so I did my usual trick with leftovers: I Googled ‘chicken, vegetables, wine and crème fraîche’ for recipe ideas. I had some, but not all, of the ingredients, so tinkered with a recipe until something delicious emerged.
Here it is, and of course it’s classified as ‘Lazy Cooking’ because it’s incredibly easy and doesn’t take long to make. This one is for adults only due to the wine content, although I’m sure most of the alcohol is burned away during the cooking.
Lazy chicken with white wine and crème fraîche:
Ingredients (serves 2):
- 2 chicken breasts, cut into strips
- 1 tbsp sesame oil or olive oil (your preference)
- 2 spring onions, chopped
- 1 stick celery, chopped
- Half a leek, chopped
- 5 closed cup mushrooms, cleaned and chopped
- 1 clove garlic, crushed
- 250ml chicken stock
- 175ml white wine
- 2 tbsp crème fraîche
- 1 tbsp butter
- Pinch of salt & pepper
Heat the oil in a frying pan and fry the strips of chicken until golden brown – they don’t need to be completely cooked through at this stage. Transfer the chicken to a plate.
Add the spring onions, celery, leek, mushrooms, garlic, salt and pepper and fry in the hot oil for a few minutes, until the mushrooms start to give up their juices.
Pour in the chicken stock and white wine and simmer on a medium heat for 15 minutes. The sauce will reduce by about half during this time.
Add the chicken and continue to cook for 5 minutes. Add the crème fraîche and butter and stir well for a couple of minutes.
Serve immediately with rice. Enjoy!
